Bruschetta Chicken

Bruschetta Chicken was pretty quick and easy to make. It also turned out to have a lot of flavor, I would definitely make it again.
Ingredients:
- Chicken - 2 breasts
- Tomato - 2 Whole Tomatoes diced
- Onion - 1/3 an onion diced
- Basil - 1 handfull diced
- Parsley - 1/2 handfull
- Olive Oil - To taste
- Salt - To taste
- Pepper - To taste
- Balsamic Vinegar - To taste
Instructions:
- Cook the chicken thoroughly
- While the chicken is cooking dice the tomatoes, onion, basil, and parsley
- Mix the tomatoes, onion, basil, and parsley in a bowl.
- Pour a favorable amount of olive oil over the mixture to coat everything.
- Add a small amount of salt and pepper to your personal preference.
- After the chicken is cooked, add the bruschetta mixture to the top of the chicken.
- Pour Balsamic vinegar over the chicken and bruschetta to lightly coat everything.
Note: You can add the balsamic vinegar to the bruschetta mixture prior to putting it on the chicken, however I find each person likes a different amount of vinegar so its best left to the individual.
