Bruschetta

After making Bruschetta chicken the other day, my brother dropped off a bunch of Tomatoes from his garden. So Stefanie and I decided to make Bruschetta again, and this time have it for dinner.
Ingredients:
- Tomatoes - 3 whole tomatoes diced
- Onion - 1/3 an onion diced
- Garlic - 2 cloves
- Basil - 1 handful
- Parsley - 1/4 handfull
- Olive Oil - Until tomatoes are coated
- Salt - To taste
- Pepper - To taste
- Balsamic Vinegar - (Optional) to taste
- Bagette - 1 whole bagette sliced
- Gouda Cheese - (Optional) 1 thin slice per
Instructions:
- Dice tomatoes
- Dice onion
- Dice herbs
- Mix into a bowl, and coat with olive oil.
- Salt and pepper the mixture to taste
- Spread the sliced bagette on a tray, and cover each peice with the bruchetta mixture.
- Lightly coat in Balsamic Vinegar if you choose to use it.
- Slice your cheese of choice thinly and put on top.
